This unit was just pulled from production.  Unit is capable of doing a barrel of cheese.  Very nice unit for the number.
Specs below:
 

hopper is 24” wide x 45” long x 26” to top of knives shaft (50” deep overall to top of hopper)
Knives on shaft are 4” long
main throat is 16 inch dia. with 1/2” holes in screen plate
20 hp on main screw auger
10 hp on dual knife shafts
