    All Stainless steel construction.Proofer with 350 active trays.Inactive trays 50. Total trays 400.Total of 3,150 active pockets.Stainless steel frame with UHMW mesh.Proofing cups removable.Proofing time to be approx. 10 minutes.Proofer to have one to three drop system for tortilla sizes.Stainless steel door covers on sides and Plexi-glass rear doors for dough ball inspection.Vertical fan for basket cleaning.
    Main frame of heavy wall stainless steel tubing.Proofer discharged is equipped with tray dump mechanism.Temperature controller at 28C or 82F.Independent inverter motor drive system.Timing gate mechanism which holds dough balls and drops them into baskets.Hardware for steam cleaning system with air blow off.Customer to supply steam cleaning machine.
