    In above video the operator is slicing 90 day aged cheddar.
    As you will see, the cheese is cut through in 11 seconds. However the operator takes 10 seconds to pull the release switch to remove the cheese. The capacity is 120 to 150 lbs (40 lbs blocks) per minute.
