Steam'N'Hold 3 pan countertop connectionless electric boilerless steamer.

The cooking chamber reduces the atmospheric pressure within to lower the temperature at which water boils, making it as low as 150 degrees Fahrenheit. This vacuum technology allows users to adjust the temperature of the steam, offering more control of cooked product without overcooking or losing quality. Providing the convenience of faster cook times, the unit doubles as a holding unit, preventing quality loss while dependably maintaining temperatures. This steamer is extremely efficient with its water expenditure using less than one gallon of water per hour, and it can lower your operating and maintenance thermostat temperature display. In the holding mode, the vacuum is released, and steam is no longer generated. This allows food to sit in a ready-to-serve state several hours after cooking without losing its natural moisture or flavor. The steamer can hold up to (3) 2 1/2" deep full size pans or (2) #400 full size pans. Built with 14-gauge stainless steel, the steamer cavity is made to last. There is no need to connect water or drain line, as this unit has a 3 gallon reservoir. The Evolution electric steamers are EPA 202 Certified which means no hood is required (please check with local authorities). This unit requires a three phase 208V connection.
